Please correct me if I am wrong, but from what I understand we are permitted 2 pieces of luggage per person for the cruise to "check" at the port which will show up in our room. I think we will have 3 bags total for the 2 of us. We are driving so I'm not sure exactly how/what we will be packing.

I also understand that we can bring "carryon" luggage onto the ship with us. I know that our camera bag and my backpack would fall into this category. However, we will also be bringing a bottle or two of liquor which must be put into our carryon bags. Is it possible to use one of our traditional rolling airline carry on bags as our cruise carryon? This would allow me to put the liquor and backpack all into one bag and roll it rather than carry it on my shoulders/back. Does a traditional 21inch rolling bag fit through the port x-ray scanner (not sure if it is identical to the ones at the airport).

The metal detector at the port is identical to airport ones. So if it would fit at an airport, it will fit there. Your bag should fit fine (it's just the really big bags wouldn't fit through).

But there is not a limit to the bags they will take from you and bring to your room. (The porters just make sure the bags are tagged and take them, they don't check to see how many people are sailing.) DCL sends 2 tags per person but if you need more, you can get them from the porters.

They really don't care how many bags you have, whether checked or carry on. As above, you will be mailed 2 tags per person, but if you need more the porters at the terminal will have them. If you're flying, just notify the CMs at the Welcome Center that you had more than the number of tags so they can identify ALL your bags.

No limits on number of carry ons, except that they must fit thru the scanner and you will be carrying, rolling, or dragging them till you have stateroom access at about 1:30.

there is no limit, but if u can check it i would. My last cruise I could of check a bag that is about the size of the roller luggage but i didnt. So i had to bring that piece of luggage around with me till the rooms opened up. its like walking around the ship with a stroller, im used to it but if your not just be mind full.

That is great news on both counts. While I know I will have to carry the rolling suitcase with me until the room is ready, I would rather roll something than carry the bags on my shoulder. We have a few electronics that I won't check (won't need them for the cruise but will on the week long stay at disney afterwards) plus some booze and one spinner rolling bag will be much easier to deal with than one or more overloaded backpacks/totebags.
