Low or no carb lunches

I'm low carb but not diabetic. For lunch, I will do a vegetable - celery, carrot sticks, cucumbers, bell peppers. Something easy to eat while I'm working that I can pick at, that I don't need to heat up or use a fork with. I'll often use a dip with it too - tzatziki, dill, French onion, or a veggie dip. I'll also have a string cheese or Babybel and a protein shake. I like Premier Protein because they are premade, I can get them at the grocery store, and they taste pretty good.

If I have time to meal prep, I'll cook up meat and have that instead of the protein shake. Something easy to throw in a microwave like a burger, grilled chicken, or steak. I've also had deli meat which I will roll up and eat cold as well. My grocery store has a selection of turkey, chicken and roast beef that are off the bone with no additives.
 
A friend told me to eat this bread - I have for a while now. Any thoughts

I often eat cottage cheese topped with a serving of almonds and sliced up dill pickles these days. I am also able to get low-carb wraps occasionally, so I'll make a grilled sandwich with a wrap filled with meat, cheese, and chopped veggies.
 
Never seen bread like that in Canada. What does it taste like?

It's not bad. Like a multi-grain. It's sprouted bread. I googled it when they told me. It's supposed to be much healthier/better than regular white bread. It's sold frozen/organic section. Trader Joe's does not have it frozen but I freeze it. I just take two slices out when I need it and put it in toaster - defrost or just toast. There are some other brands. It's double the price of regular priced white bread. Slices are not that big either.

I like romaine lettuce leaves spread with homemade guacamole and covered with diced chicken breast, celery and cucumber (or whatever veggies you have handy).

Also fried eggs with melted cheese on top and served with salsa.

Chilled fish salad: any cooked, flaked white fish (e.g. cod), diced celery, finely chopped onion, mayo, green relish, lemon juice. Mix together and chill. serve on lettuce leaves.

there are recipes for egg based bread online - my sister makes this all the time - it's good! (sorry, I don't make it but she just googled it to find the recipe that she likes)

Look at Joel Fuhrman recipes - he has a lot of good ones! Like a mushroom stroganoff that is awesome and cauliflower / green pea curry.
 
So many great ideas in this thread. I'm taking notes!! Lately my go-to meals are:

Quinoa Bowls - quinoa, protein of choice (chicken, fish, sausage, etc), hummus, tzatziki sauce, salsa, pretty much whatever I feel like adding to it. I usually make quinoa once a week, and keep in the fridge to use throughout the week.

Chicken salad (served in lettuce wrap or just eaten with a fork) - canned chicken, mayo, chopped cucumbers, celery, grapes, apples, and craisins. Makes for a pretty hearty salad.

For lunches on the go (in my car), I will usually have a protein shake. My favorite is Fairlife Core Power.

It actually has a good ratio of protein to carbs to fiber:
Protein 5g
Carbs 15g
Fiber 3g

It may be in your refrigerated section. I've seen it there. I guess that stops the sprouting or something. :confused3

I always have to google it - I forget the "meaning"

Sprouted bread is a type of bread made from whole grains that have been allowed to sprout, that is, to germinate, before being milled into flour. Loaded with healthy nutrients and fiber. It's as healthy as bread gets. - not my words - from google :)
 
Aldi has a "no carb" bread available too. It has some carbs, but it is cancelled out by the fiber. I have been eating a couple slices a day of that, mainly as toast. I have not gained any weight back or noticed any difference.
I've tried that bread. It's kinda expensive and average in terms of taste. But, yeah, it genuinely didn't move my blood sugar.

I really enjoy good bread -- my favorite being a slightly chewy, nutty/seedy whole wheat bread. I tend towards having HALF a sandwich/choosing a no-carb sandwich filling (which isn't all that hard -- chicken, tuna or egg salad are my go-tos).
Cold soups ... ratatouille ...
Vegetable-heavy soups are easy to make /easy to freeze in individual portions.

Vegetables are always-always-always the right answer. Most of us could stand a few more in our diet.

Yes, I was going to say, Check Pinterest for LOADS of Keto breads. The major players tend to be mozzarella cheese, almond flour, eggs.

I highly recommend picking up one of those mini-waffle makers (name brand Dash); they're great for making quick Keto bread FAST. This works well for tuna salad-type sandwiches, bacon-egg-cheese sandwiches, etc.

I love chicken salad, but if you're staying low-carb, you need to be moderate with the fruits and especially the craisins. Veg is lower-carb than fruit, and dried fruit is actually high in carbs. I like pecans in my chicken salad.

Other things that haven't been mentioned yet:

- Boiled eggs are cheap and keep a long time in the refrigerator.
- Nuts are low carb. Almonds are probably the best choice, but I like Cashews best.
- Avocados are good for blood sugar, though if you make Avocado Toast (which I love), it's balanced against the carbs in the bread.
- Peanut butter, pimento cheese, or cream cheese sprinkled with Everything Bagel Spice are good spread over celery.
- I made some amazing fish the other night: Heat a cast iron pan to high, drizzle with olive oil. Slather a tilapia fillet with mustard, dredge in a 50-50 mixture of panko + parmesan cheese with a little garlic and Italian spices. Drop the fish into the pan, then pop it in the oven /broil for 5 minutes. Wow, was it good.
- Sugar-free jello with Cool Whip is a great sweet treat.

Avoid cauliflower pizza. Well, at least, avoid store-bought stuff -- I haven't tried to make it homemade. I'm not a big fan of cauliflower in place of maccaroni in mac-and-cheese either.
 
For lunch? A can of oysters, or sardines, or mackerel. Cucumber salad (made with either vinegar, sour cream, yogurt, or mayo). Egg salad. Pickles. Sauerkraut. Beets. Almond butter on a corn or whole wheat tortilla. Now I'm hungry.
