Anyone have any good low fat salad dressings that they can pass on? I have one and it's to die for, but it can get tiring after awhile....

Spinach/Pomegranate Salad

Spinach (or any greenery)
Seeds from pomegranate (blackberries work too)
1 tbsp toasted pine nuts (toasted almonds work great too)

Dressing:
2 tbsp olive oil
2 tbsp red wine vinegar
1 tsp maple syrup
½ tsp Dijon mustard
½ tsp oregano
salt and pepper

Mix dressing together and pour over salad

Its not incredibly low fat, but better than some....;)

Mix equal parts of cranberry sauce (jelly-type stuff), lemon juice and olive oil (if you use a very good Virgin oil you can halve the amount:thumbsup2 ) and whisk together - very good on salads containing peppery/bitter leaves (like rocket and raddaccio). Sprinkle on a few toasted walnuts for extra yumminess:goodvibes

Its also lovely on a goats cheese and pear salad, but that undoes some of the low fatness:rotfl:
 
When I make salads that include the dressing in the recipe, I just cut the oil by at least half. Fortunately, we all like the acidic taste more than the oil. ;)

Most often, though, I just open a bottle of Newman's Own & pour off most of the oil. :lmao: DH always wants to buy the Light versions, but they all seem to contain more sugar/carbs - I guess they have to use something to thicken it. LOL
