Low fat breakfast idea

HI all,

Just thought I would post this for others. I am breakfast challenged but just got a great recipe for quick quiche as so easy to prepare.

blend in blender:

4 or 5 eggs or use egg beaters if u like
spinach, usually I throw in 1 cup
fresh brocoli florets
low fat cheddar cheese couple of thick slices
fresh mushrooms

blend all ingredients then pour into sprayed muffin trays, cook at 350 for 18-20 mins. when taken out of the oven they will fall. You can customize this to add different veggies or take out the spinach but i thinks its a good way to get in your veggies. I also freeze the extras so I can take them out and zap them in the microwave for a quick breakfast. Enjoy.

Thanks so much. This sounds awesome! One question, how many quiches does it make? I'm trying to figure out the calorie content. Can't wait to try this one out. :)
 
This recipe will make 1/2 dozen if you want to stretch it a little farther use a little water. I just doubled the recipe when i made this yesterday and a little water and I made 12 quiches. Also I did not blend my mushrooms, or the cheese I chopped them up very tiny and added them after I poured the egg mixture into the trays.

If you use spinach, beware they will be green lol. but taste just as yummy. when they are baking they puff up very high but will fall once out of the oven. But sooo yummy just had two this am.

I am doing ww and WITHOUT low fat cheese and the amount that i used they would be 2.6 points each yikes!! but better than no breakfast. If you used low fat cheese and egg beaters I am sure they would go down to 1 point or 1.5 each since the veggies don't count for anything. My eggs that I used were 70 cal 1 g fat each, veggies I dont count, and the cheese i used is 240 cal 20 g fat :scared1: for 2 cubes; but one 3 cm cube should be good to get u a little cheese in each one. So the way I made it : 240 cal cheese + 700 cal for all the eggs / 12 = 78 cal each
Next time I will use low fat cheese and egg beaters will cut the points in half i think. Hope this helps. I am new to ww so not sure if i did the points thing exactly right but the calories are there.

I figured about 70-80 calories each also. I made them yesterday for lunch. They were pretty tasty. :thumbsup2 You're right though, they were very green.:eek: :)
 

I know I have tried to find low fat cheddar cheese or fat free or whatever but cannot find anything but the regular. I know a 1/4 cup shredded low fat cheddar by kraft is very low in fat, but cannot find it at my grocery store.

Oh well they are still very nutritious and yummy. The first day I made then I ate three in a row!! :rolleyes1
