Low-cholesterol/ low-sodium diet

I have been appointed planner of all things Disney for our Grand Gathering this summer. My sister in law is very concerned that my brother will not be able to stick on his diet during the trip. He is a big muscular guy that has developed very high cholesterol even though he is very fit.

We have a lot of buffets planned, so it is hard to know nutrition info for these types of food. Does anyone have any good suggestions as to what to eat in the following places?

Le Cellier
O'Hana
1900 Park Fare
Boma
Chef Mickey's
The Wave

Low Cholesterol/Low Sodium is not a problem at Disney, but it is going to take a lot of personal restraint if you're doing all of those buffets/AYCE places.
Usual advice: Avoid soups, cheese, meats high in cholesterol. Stick to fresh things and no sauces. There is plenty of chicken and fish along with fresh fruit and veggies at Disney. The places you have selected offer many choices which are healthy. People who follow this sort of diet know what they should and should not eat. Even quick service will have some good options if you avoid burgers/fries, pizza, hotdogs and the like. Disney has grilled chicken sandwiches and most resort food courts (Values and Moderates) will have healthy options too.

It is going to come down to choices and portion control, which may be tough, but ultimately it is a personal decision as to what we eat.
