I know I DIDN'T.. at first!
On the low carb friends board there is a thread on making hash browns with RADISHES!
If this has been posted before forgive me!
I thought I'd try it out because it couldn't hurt.
I bought a bag of red radishes, cut off the ends and chopped they up into thin slices. You can quarter them also. Chopped up a small sweet onion and sauteed them in a small amount of oil and 2 tbsns of butter. You can add crumbled cooked bacon, salt pepper and garlic powder to taste. I did it the same as I do my own hash browns. Cover and cook on med heat for about a half hour to 45 mins. They are incredible!
The BIG test.... I left them on the stove and when my 11yo came home he proclaimed "MOM! You made hash browns!!"
I just haphazardly replied that I made them from low carb potatoes....
He took one bite and said "yummmmmmmm..."
So far I've had to make them 3 more times!
Anytime you can get a kid to eat vegetables I say, why not?!!
BTW, they do come out a bit pink or red but that's okay. Remember to let them cook for a long time so they are soft.

I may have to give that a try! 
. They have both been saying that it's been a long time since we've had potatoes and they're missing them. Maybe I can fool them into eating these "low carb potatoes"
When he finds out what they really are I'm gonna have a LOT of 'spaining to do!
