Low carbers, missing hash browns? You are NOT going to believe this!

I know I DIDN'T.. at first!

On the low carb friends board there is a thread on making hash browns with RADISHES!

If this has been posted before forgive me!


I thought I'd try it out because it couldn't hurt.

I bought a bag of red radishes, cut off the ends and chopped they up into thin slices. You can quarter them also. Chopped up a small sweet onion and sauteed them in a small amount of oil and 2 tbsns of butter. You can add crumbled cooked bacon, salt pepper and garlic powder to taste. I did it the same as I do my own hash browns. Cover and cook on med heat for about a half hour to 45 mins. They are incredible!

The BIG test.... I left them on the stove and when my 11yo came home he proclaimed "MOM! You made hash browns!!"

I just haphazardly replied that I made them from low carb potatoes.... :rolleyes:

He took one bite and said "yummmmmmmm..."

So far I've had to make them 3 more times!

Anytime you can get a kid to eat vegetables I say, why not?!!

BTW, they do come out a bit pink or red but that's okay. Remember to let them cook for a long time so they are soft.

Radishes, huh? Those are on my vegetable list! :scratchin I may have to give that a try! :wave2:
 

Thanks, I will try this. Actually I hate radishes, but I've only tried them raw and found them a bit 'spicy' for lack of a better word. But, I'll give anything a chance.
 
Thanks, Robin-I'll have to give them a try. A couple eggs over easy, some "radish hash browns", and a slice of low carb(3Gm) toast- yummy breakfast for me.
 
I'm definitely going to have to give these a try, but I'll have to prepare them when DH and DD aren't around to see that they are radishes or I don't think I'll even be able to get them to try them ;). They have both been saying that it's been a long time since we've had potatoes and they're missing them. Maybe I can fool them into eating these "low carb potatoes" ;) .

I forgot to add the seasonings so I added it to the original post. Mostly you just season it the way you would potatoes.

We just left the supermarket where Michael couldn't wait to get the "low carb red potatoes" for the hash browns.... :p When he finds out what they really are I'm gonna have a LOT of 'spaining to do!
 
I'm not much for trying new recipes, but I've gotta try this one! Have to go shopping for those "low carb potatoes" first! Thanks, Robin, for posting it!
 
I've read that it works with turnips and rutabagas too.

Now I just have to try the cauliflower faux rice.
