Potato Latkes

Yield: about 12 latkes
1 egg
1 small onion, cut in chunks
1 tablespoon flour or matzo meal
1/2 teaspoon salt
generous dash of pepper
3 medium potatoes, peeled and cubed
oil for frying

In food processor with metal blade, whirl the egg, onion, matzo meal, salt and pepper until smooth.

Add potatoes. Whirl until mixture is fairly smooth. (If you cut the potatoes ahead, keep them covered with cold water to prevent darkening. Drain well before using)

In large skillet, heat 1/2" oil until hot. Drop into the oil scant 1/3 cupful potato mixture several inches apart. Gently flatten each mound into a 4" circle.

Fry until golden brown, turning once. Drain on paper towels. Keep warm in 200°F oven while frying the rest.

I love latkes!!! but mine usually end up soggy....i'm definetly going to try this recipe though!! I'm sure they'll end up great!
