I've been good with my lower carbs resolution so far. I love Tuna and Chicken salad. But if I have to eat the same old recipe all the time, I know I will grow tired of them quickly.

Any recipes you want to share that are kind of "off the beaten path"?
 
Shredded cooked chicken breast, mayonaise, cracked black pepper, quartered or halved white grapes and chopped pecans. Mix together the night before you eat it.
 
My mom's recipe is a bit different because it includes chopped eggs (good for protein, also yummy.)

Shredded Chicken
4-5 hard boiled eggs, cooled and chopped
Chopped celery
Chopped, roasted almonds
Small can of drained crushed pineapple
Salt, Pepper, and Celery Seeds to taste

Mix the above with mayo, chill, and serve.
 

Shredded chicken (really, really shredded. like food processor shredded.)
fat free or reduced fat cream cheese
chopped pecans.

Yumm-o.
 
Chopped breast from a rotisserie roasted chicken, chopped celery, red grapes halved, one apple chopped, chopped pecans or walnuts, salt, pepper and Duke's mayonaise. Delicious!

Alternatively, chopped chicken breast, dried cranberries, mandarin oranges and mayo. Mix a little bit of the juice from the oranges in the mayo.

Chicken or tuna, celery, red onions, salt, pepper, with red wine vinegar over a 1/2 head of fresh iceberg lettuce. Really filling, really good, really low in calories and carbs.
 
TUNA SALAD LETTUCE WRAP

1 1/2 tsp classic Ceasar Salad dressing
1/2 can of tuna
2 baby carrots, chopped
2 lettuce leaves
3 olives
1/2 roma tomato
1/2 tsp each garlic powder
1/2 tsp basil leaves
1/2 tsp ground black pepper
1/2 tsp salt

In a small bowl, combine tuna, chopped carrot, olives, and tomato. Chop one of the lettuce leaves and add.
Spinkle with remaining spices, salad dressing, then mix thoroughly.

Using the other lettuce leaf, place tuna salad in tne center, and then fold and enjoy.



Pesto Tuna Salad with Sun-Dried Tomatoes

1 (6 ounce) can canned tuna
1/4 cup prepared basil pesto sauce
6 oil-packed sun-dried tomatoes, drained and diced
2 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
DIRECTIONS
In a bowl, mix the tuna, pesto, sun-dried tomatoes, mayonnaise, and Parmesan cheese. Cover, and refrigerate until ready to serve.


South Beach Chopped Salad with Tuna


1 (6 ounce) can water-packed tuna
1/3 cup chopped cucumber
1/3 cup chopped tomato
1/3 cup chopped avocado
1/3 cup chopped celery
1/3 cup chopped radishes
1 cup chopped romaine lettuce

Dressing:
4 teaspoons extra virgin olive oil
2 tablespoons fresh lime juice
2 cloves garlic, finely chopped
1/2 teaspoon black pepper
DIRECTIONS
To make the salad: Layer the tuna, cucumber, tomato, avocado, celery, radishes, and lettuce in a decorative glass bowl.
To make the dressing: Mix the olive oil, limejuice, garlic, and pepper. Drizzle over the salad.

I've made this with green grapes and slivered almonds for decades. One of my favorites
 
i'm a purist, love just tuna with mayo or shredded chicken with mayo, but if i want to go all out crazy.... i add dill :)
 
At least 50 years ago the mother of one of my friends used to make tuna sandwiches with tuna, mayo, chopped apple, and pecans. A different twist from the pickle version.
 
They were doing this free sample at Sam's Club a couple of weeks ago and it was YUMMY! We bought the ingredients right then to go home and make it.

Canned chicken (like the way tuna comes)
Ranch dressing
Bacon Bits (the real kind, not those powdered things)

Mix all together and eat with crackers, or bread - low carb? maybe on a bed of lettuce.

I also add dehydrated onion, salt and fresh cracked pepper.

Make it a couple of hours ahead of time. The bacon needs time to infuse the smoky flavor all through. YUMMY!!
