Looking for Ideas for "off the grid" vacation

I'm interested in things you've done off the grid on your Disney vacations. My son (21) and I are going on a trip together as things just worked out that we can do it. We're both big Disney fans, with EPCOT being our favorite park.

We'll be spending 8 days in March 2017 in the parks, and are looking for some different things to do. We've been there at least 10 times, to give you an idea of our experience. My son has done Behind the Seeds tour at The Land, and the Family Magic Tour at MK. I've done the Keys tour at MK.

I'm interested in things you do to experience more of the hidden things in Disney. Thanks!!
 
Resort hopping is always fun and it's practically free to do. I'd recommend resort hopping AKL, WL and FWC, POR, Poly, GF, and the Boardwalk.
 
DD and DS LOVED the Africa Trek.
If they are having it check Club Villain.
Try booking Dining with Imagineer, DS has done several times, doesn't get more personal that this.
 

Ever rent a boat from the Contemporary? I would say the Wilderness Lodge, but closed during refurbishment.
 
Kennedy Space Center is great. Clearwater beach (however it is not a day trip)
 
Thanks for all the great ideas! I'm going to look into the boat rentals, and the aqua seas tour sounds cool.
