Here are a few that might work.
Taco Soup
1½ lbs. ground beef
1 onion
2 cans diced tomatoes (w/green peppers & onions)
1 can Ro-Tel
1 can Hominy, White Shoepeg Corn, or yellow corn
1 can pinto beans
1 can black beans
1 sm. can diced green chilis
1 pkg. taco seasoning
1 pkg. Hidden Valley Ranch mix
Cook beef & onions until meat is browned, drain.
Drain all cans except for tomatoes & Ro-Tel.
Combine all ingredients in crockpot and cook for 2-2½ hours or until hot.
You can serve this with tortilla chips, cheese & sour cream.
Tex-Mex Tostada Soup

GARNISH
Tortilla chips -- crush
Cheddar cheese -- shred
Lettuce -- shred
Sour cream
Picante sauce
Brown meat with onion and drain well. Place all ingredients into slow cooker.
Cook LOW for 8 hours.
Ladle into soup bowls and top with tortilla chips, Cheddar, lettuce, sour cream
and additional picante sauce.
Beef Fajita Soup
1 lb Lean boneless beef stew meat, trimmed of all fat and cut into 1/2-inch cubes
14 1/2 oz Can beef broth
2 c Water
16 oz Package frozen fajita-style vegetables, thawed
14 1/2 oz Can Mexican-style thick and chunky tomato sauce
15 oz Can pinto beans, rinsed and drained
2 ts Ground cumin
15 oz Can black beans, rinsed and drained
1/4 ts Seasoned salt
1/4 ts Garlic pepper
Sour cream
chopped avocado
shredded Monterey Jack or Chedder Cheese
In a 3 1/2-quart electric slow cooker, combine the beef, broth, water, vegetables, tomato sauce, pinto beans, and cumin.
Cover and cook on the low heat setting 8 to 8 1/2 hours, or until the beef is tender.
Stir in the black beans, seasoned salt, and garlic pepper. Heat, covered, 10 minutes longer. Serve with sour cream, avocado, and cheese.
All Day Beef Stew For The Crock Pot
1 Pound beef stew meat
4 carrots, cut in chunks
1 onion, chopped
2-3 stalks celery, cut in chunks
2-3 Medium potatoes, cut in chunks
1 Can whole or stewed tomatoes, undrained
Dash thyme
Dash oregano
Pinch salt
1 beef bouillon cube
1-1/2 Cups water

Combine all ingredients in crockpot. Cover and cook 8-10 hrs. on low.
8-Can Crock Pot Soup
1 Pound ground beef
1 Can Rotel tomatoes
1 Can whole kernel corn
1 Can Veg-All vegetables
1 Can chili with beans
1 Can chili without beans
1 Can diced tomatoes
1 Can Campbell's tomato soup
1 Can Campbell's vegetable soup
Brown and drain ground beef. Put in large crock pot. Then add but do not drain the Rotel tomatoes, corn, veg-all, chili, diced tomatoes, and Campbell's soups. Turn crock pot on low, may simmer all day if desired.
