Looking for an easy crockpot chili recipe

This is a family favorite! It is kinda like Wendy's Chili

Crockpot Tex Mex Chili

1 pound ground beef or pork sausage
2 cloves garlic -- minced
3 tsp. chili powder -- (3 to 4)
1/2 teaspoon ground cumin
1 (15 1/2 oz.) red kidney beans drained
1 cup chopped celery
1 cup chopped onion
1/2 cup chopped green pepper
1 (16 oz.) can tomatoes -- cut up
1 Rotel tomatoes and chilies
1 cup V8 juice or tomato juice
1 (6 oz.) can tomato paste
1/4 teaspoon salt
Shredded Cheddar cheese
Sour cream

In skillet brown meat and garlic. Drain. Stir in chili powder and cumin; cook 2 minutes more. Meanwhile in 3 1/2-, 4, 5, 6- quart crockery cooker combine beans, celery, onions, green pepper. Add undrained tomatoes, tomatoes and chilies, vegetable juice, tomato paste and salt. Stir in cooked meat. Cover cook over low heat setting for 10-12 hours or on high 4-5 hours.

Ladle chili into soup bowls. Pass shredded cheese and sour cream with chili. Serves 4 to 6.

The recipe sounds wonderful. I'd like to try it, but one question.....what are Rotel tomatoes and chilies? I don't remember seeing that up here in Ohio. Is there something I can compare it to? Can I substitute another 16 oz. can of tomatoes? Thanks for sharing!
 

A lot of companies, ex. Hunts and Del Monte, are now selling a tomato and chilies type combo. Rotel is a common brand around here. Any brand will do really.

We have also used the hotter versions of Rotel to "kick it up a notch" as DH has a fire proof tongue! LOL!

I just finished getting all the ingredients into the crockpot, it looks like it's going to be yummy. I hadn't heard of Rotel before either, but I found it in the Mexican food aisle of the grocery store. Right by all the Ortega stuff.

I often substitute mild salsa for rotel. I usually buy salsa in the 1/2 gallon size so I don't bother buying rotel anymore.
 
Thanks for letting me know what to look for. Now I won't look so lost when I go to the grocery store! I love to try new recipes and the next time I make chili I'm going to try this recipe. I just had Wendy's chili today. It warms me up on a cold day like today.
 
I've made this recipe and it is delicious but it is a bit on the hot side. I loved it but dh and sons couldn't eat it. Next time I substituted plain diced tomatoes for the tomatoes and chilies and it was more palatable for the rest of the family.
 
Hunt's sells a chilli starter sauce and it is really good. In fact I am making it tomorrow. You add ground beef and beans and water and that is it. It is seasoned very well. I ususally add more chilli powder because we like it spicy.
