Looking for a good pumpkin pie recipe

I don't eat pumpkin pie, but my sister's new DH enjoys it & they will be here for Thanksgiving. Does anyone have a good, easy, quick recipe they can share.

I'm pretty good at making pies, but I don't want something that's too involved.

ITA. That's the one I've been making every year for more than 20 years and it's always gotten raves. In an effort at making Thanksgiving at least a tiny bit healthier (lol), I even switched the regular condensed (or evaporated, or whatever it is) milk with fat-free a few years ago, and no one noticed. I waited till everyone was done before I told them.

Yep. Use the recipe on the Libby's can. To make it a bit healthier, use fat-free evaporated milk and egg substitute. You can even buy pre-made pie crusts - either frozen or the ready-made kind in the refrigerated section.

Libby's can. Quick, easy, and totally delicious. The only tricky part to pumplin pie is telling when it's done. It should be mostly set with just a slight jiggle in the middle. It will be all puffy when you take it out, then collapses as it cools.

Libby's recipe is a good one, I agree. Mine always get too dark on the top by the time they are cooked properly, though, so here's my recipe:

1. Go to Costco
2. Go back by the bakery
3. Pick up the pie (and probably $100 worth of other stuff because it is the $100 club)
4. Pay for it
5. Enjoy!



When I baked my own I always left some of the sugar out. I don't like super sweet pumpkin pie.

My 13 uear old son has been making the pumpkin pie for about 7 years! With that said we like the recipe on the eagle brand website, it has to be the easiest recipe, with just a few ingredients. It uses a can of sweetened condensed milk and I generally buy the low fat version of that and the pie comes out great.

I use the Libby's recipe and I buy the Pet Ritz deep dish frozen pie crust.

There was a pumpkin pie that Paula Dean made the other night on Food Network with apple butter in it. Sounded very good and I'll be giving it a try this year.
