Looking for a cookie recipe?

I'm making mickey,pooh and sponge bob cookies with the wiltons kit and was wondering if anyone had a cookies recipe other than sugar that works well with cookie cutter. They would also have to bake up pretty flat for decorating. Thanks for your help.
 
How about a molassas recipe.. I don't have one - but my grandmother makes them and they are rolled out and bake flat - she gives us a small pizza box filled each year for christmas.. Michelle
 
The only ones we ever decorated were the sugar cookies. However, I have 2 recipes that might work.

The first is the cookie portion of my grandmother's "Filled Cookie" recipe. (It gets a date & raisin filling between two cookies. It ends up being a softer cookie - at least with the filling. I've never made them w/o it.

2 c sugar
2 tsp vanilla
2/3 c milk
4 eggs
1 1/3 c shortening
6 c flour
6 tsp baking powder
1 tsp salt

Combine ingredients; then roll & cut out. (Roll on floured surface to 1/8" thickness. I use a 2 1/2" diameter biscuit cutter or a cookie cutter with scalloped edges.) Drop ~ teaspoon of dates onto each cookie & cover with another. Press down edges of top cookie. (No need to completely seal it.) Bake at 350 for 15 - 20 minutes.

(I don't remember exactly how many cookies this makes - but I think it was around 6 dozen of the filled ones. It would be ~12 doz just flat.)

The other recipe is
Crisp Buttery Cookie
½ c sugar
½ c shortening
½ c sour cream
2 eggs
1 tsp vanilla
4 c flour
1 tsp baking soda
½ tsp salt
Sift the flour, sugar, baking soda & salt. Cut in shortening then mix in eggs & vanilla. Add dry ingredients.
Refrigerate overnight. Roll & cut out. Bake at 425. Yield: 4 dozen
 
Gingerbread or shortbread both come to mind. I also have a recipe that uses maple syrup or honey in it and it makes great cookies.

Mix together:
1/3 cup softened shortening
1/3 cup sugar
1 tsp. vanilla

Sift together:
2-3/4 cups flour
1 tsp. baking soda
1 tsp. salt

Stir into shortening mixture:
1 egg
2/3 cup honey or maple syrup

Add flour mixture to shortening mixture and blend well.
Chill dough for at least 1 hour. Roll dough to thickness of 1/4". Lightly dust cookie cutters with flour and cut dough into desired shapes.

Place cut shapes 1" apart on lightly greased baking sheet. Preheat oven to 375ºF. Bake for 8-10 minutes or until no imprint remains when cookie is lightly touched.

Chocolate Ginger Cutout Cookies

3 cups flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
3/4 teaspoon ground ginger
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground cloves
2/3 cup shortening
1/2 cup sugar
1 egg
1/2 cup dark corn syrup
1/4 cup milk
1 egg white
1 tablespoon water

In a medium mixing bowl combine flour, cocoa powder, baking soda, ginger, baking powder, cinnamon, salt and cloves.
In a large mixing bowl beat shortening with an electric mixer on medium speed for 30 seconds. Add sugar and beat until fluffy. Add whole egg, corn syrup and milk. Beat well.
Beat in flour mixture, stirring in last part with a wooden spoon until well mixed.
Divide dough in half. Cover and refrigerate about 1 hour or until easy to handle.
On a lightly floured surface, roll each portion of the dough 1/8" thick. Cut with 3-4" cookie cutters. Place on a greased cookie sheet.
Combine the egg white and water; brush on cookie cutouts.
Bake 375 degrees for 5-7 min. or until lightly puffed and set. Cool thoroughly on a wire rack. Pipe on decorator icing.

Eggnog Cut-Out Cookies*

2 cups sugar
1 cup butter -- softened
2 eggs
1/3 cup eggnog
1 teaspoon vanilla
4 cups all-purpose flour
1 teaspoon nutmeg
2 teaspoons baking powder
Egg Yolk Paint
2 egg yolks
1/2 teaspoon water
Assorted colors of liquid food color

In large bowl, combine sugar, butter and eggs. Beat until light and fluffy. Stir in eggnog and vanilla.
In medium bowl, combine flour, nutmeg and baking powder. Add flour mixture to butter mixture. Blend well. Cover with plastic wrap. Refrigerate 30 minutes for easier handling.
Meanwhile, in small bowl, combine egg yolks and water. Blend well.
Divide mixture into several small cups. Tint with food color. If paint thickens, add a few drops water.
Heat oven to 350ºF.
Divide dough in half.
On lightly floured surface, roll half of dough to 1/8-inch thickness.
Cut with assorted cutters.
Place 2 inches apart on ungreased cookie sheets.
Using small paint brush, paint designs on cookies with egg yolk paint.
Bake at 350ºF. for 7 to 10 minutes or until cookies are light golden brown. Remove from cookie sheets.

Lemon Cut-Out Cookies

1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine -- softened
1 1/2 cups sugar
1 egg
1/3 cup lemon juice

Stir together flour, baking powder, baking soda and salt. Set aside.
In large mixer bowl, beat butter and sugar until fluffy. Beat in egg.
Gradually add dry ingredients alternately with lemon juice; mix well (dough will be soft). Chill overnight in refrigerator or 2 hours in freezer.
Preheat oven to 375 degrees.
On well-floured surface, roll out one-third of dough to 1/8" thickness. Cut with floured cookie cutters. Place 1" apart onto greased cookie sheets.
Bake 8-10 minutes. Cool. Ice and decorate as desired.

Orangy Sugar Cookies

1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter -- softened
2 tablespoons grated orange peel
1 cup sugar
1/4 cup orange juice
2 tablespoons lemon juice

Sift flour, baking powder and salt onto waxed paper.
Beat together butter, orange peel and sugar with electric mixer until fluffy. Stir in orange and lemon juices. Stir in dry ingredients until blended. Chill several hours or overnight.
Preheat oven to 375 degrees.
Roll dough to a thickness of 1/6". Cut out with cookie cutters and place 1" apart on cookie sheets.
Bake for 8 minutes, until set and lightly golden. Cool on wire racks.

Spicy Molasses Cut-outs

1 cup butter or margarine -- softened
1 cup sugar
1 cup light molasses
5 cups flour
2 teaspoons baking soda
2 teaspoons ground ginger
1/2 teaspoon salt
1/2 cup cold strong tea
1 teaspoon vanilla extract
split almonds

Cream butter and sugar until light. Beat in molasses.
Add sifted dry ingredients alternately with tea. Mix well. Add vanilla.
Chill for at least 24 hours.
Roll out very thin and cut into fancy shapes.
Arrange on well-greased cookie sheets and decorate with almonds.
Bake at 375 degrees for 8-10 minutes.
 
Mmmmm, Merriweather! Those lemon & orange ones sound so good, I might just decide it's worth it to do some roll-out cookies this year. ;) I usually take the lazy way & only do drop cookies but lemon is my favorite! And DS (the pirate: ) & DIL really like orange!

:teeth: I don't usually do roll-out cookies either.....I save that for DD.
She loves the orange ones :)
 
I love molasses cookies but i think it would look like mickey spent to much time in the sun as the frosting is only on the ear portion. I think i'll try the butter cookies and the orange or lemon. I'm going to make each design a different flavor and then take them on our Early Xmas Disney/Universal trip. I know in this day and age it seems crazy to do this but i always do something like this for our trips and my DH thinks it great. Last year we went away for Chrismas and did a 10 day cruise and then 5 days at WDW. When he got home i had all the bags pack and a home cooked dinner of Boma Potato Soup(this was the hotel we were staying at) a mixed drink from Royal Caribbean book(thats the ship we were on ) and then for dessert peanutbutter playdough looked just like the picture in the Disney magazine. We even got a chance to try the potato soup at Boma's and DH looked at me and said it was good but mine was better. I couldn't disagree as i couldn't taste the food very well due to catching the flu on the cruise. This time we are coming in on seperate planes and i'm going to package one of each cookie and hang it from his rear view mirror for him to find and enjoy on the plane. Thanks to all that helped.
