30 is not the max, it's the most you can book at one time on line. You can book 30 then book another 30.... But sadly my points run out before I can book the 3rd set of 30.
You can only book seven nights exactly at 11 or 7 months out. You either have to wait until you are nine days past that to book all 16 or book seven, then wait a few days and book a few more. Repeat until you have all you need. If you are booking a non-home resort, you may lose out on your nights over seven day out if someone else books them before you do.
Most we have stayed is 16 nights a few years ago. We usually do a 2br or 2 studios (depending on where we’re staying) for 14 nights each year. My parents are also DVC and we split the point cost. I love these long trips, you can really take your time in the parks and soak up the atmosphere.
We normally stay 10 or 11 nights, but we've stayed 14 in the past.
It's incredible how your perspective on going to the parks changes when you are there for more than a week. Feeling like you'd like to sleep in? No problem. It's raining and cold? No problem. Don't feel like staying until the fireworks? No problem.

We mostly do 8 nights...Which is I'd say good enough to get pretty much everything accomplished...We have done an 11 night & I believe a 12 once, which I find to be absolutely perfect...It gives time in between park days for relaxing resort days, which is nice....And as most have stated prior, you don't necessarily have to commando everything, which in turn makes for a much better experience IMHO
I know of a few guests who winter at Hilton Head resort. They stay there for 30 days, go down to WDW for a weekend, back up to DHHIR for another 30, etc.
Regarding the OP's question, the longest I've stayed is 12 nights. In that case, I prefer to split my stay between 2 resorts.
If you plan to have a longer term stay be aware of FP restrictions. You can only book FP’s in advance for 14 days on the same reservation. For stays more than 14 days you have to wait until you start your vacation before the System allows you to book more FP’s.
