Logistics of FP+ and Rider Swaps

My brain is beginning to hurt with all the logistics of planning FP+ and rider swap. I'm hoping someone can help me out with this...

My family (me, DH, DD-age 4, DS-age 2), DH's parents, and my DH's Sister's Family (Mom, Dad, DS-age 4, DS-age 1) are all traveling together.

Let's say for Epcot we want a FP for Soarin'. Obviously at least one, if not two adults will stay behind to watch the two smaller kids. So they wouldn't need FP+ booked. What then, do we use those FP+s for? We're left with 2 FP+ to book, but we can't book kids with them also if we've used up their selections. Could those 2 get FP+ for Test Track and then use rider swap for the other set of parents and the older kids?
 
I totally understand how it works, I guess I'm more asking for suggestions on how to use those FP+ that we wouldn't use with me and the other mom going on the original round of the ride. Would we go on Test Track or Maelstrom without kids and then get a rider swap for our hubbies? Then they would go with the kids? Just trying to maximize our FP+ alottment.

The two adults that stay behind - what are they going to do? One idea is to take their FP for Living w the Land. It's great to do while you wait for half your party to return.

Do those two not want to ride Soarin at all? If they want to, they should keep the FP for that, and then ride when the others get back.

Rider Switch has nothing to do w FastPass. Rider Switch is such that if you are going to wait standby for something and someone in your party cannot ride, then when that half is done, the other half can ride via the FastPass lane, thus you don't have to wait thru Standby twice.
