We are planning a cruise for next July out of PC. So we're planning on flying into MCO the day before. There will be 6 of us.

My mom (not interested in going on the cruise) lives in Poinciana (about an hour from MCO). We'd like to have dinner with her the night we fly in.
She's not crazy about driving (she will, but just not something she likes to do and traffic around MCO isn't the best).

Here are the options I've come up with:
1) Shuttle to an MCO area hotel, have her drive up and meet us at a restaurant. Arrange for a service to get from the hotel to the port the next morning.
2) Rent a mini-van for one night, drive to somewhere she's comfortable driving for dinner, then drive to PC and get a hotel there (or somewhere in Orlando and drive to the port the next morning). Return the minivan before getting on the ship. Rent another minivan to get back to MCO after the cruise(?).

Not crazy about either one for different reasons and looking for some other suggestions.

Any other ideas?
 
Have your party stay at the airport hotel the evening you arrive then you don't need transportation to get to an off-site hotel. Have one of those airport limo services bring your mom to/from the airport. Assume there is a nice restaurant at the hotel or perhaps one of various sit-down restaurants in the airport terminal.

Never done a cruise but don't they offer some sort of transfers between MCO airport and the cruise departure location? Would imagine there are several other people flying into MCO for those cruises and they all need to get to the departure place.
