Live trip report June 2014 please Post real time pictures

nice weather and we slept till 9:00 am












time to clean up the site and a little laundry too, BBQ to come soon
 
Sorry out of order, I figured out our point and shoot camera, hopefully the quality will be better.

Here is the items you need to make BBQ ribs at the fort







wireless thermometer helps





2 slabs or BBQ pork ribs I removed the membrane and left in the picture (bottom)



Used cherry wood pellets and set the smoker at 260



Set wireless probe in the middle back for comparison temp readings



Simple A1 rub applied ( if you have room in your fridge I would let rub sit overnight). I need to spend more time researching rubs to step up my game a bit.A1 is just ok




placed in smoker



Turn on wireless receiver, I do not use the food probe for ribs, it is plugged in and shows outside temp. I try to keep the wireless probe temp around 215 degrees.



must haves to kill time too



mixed 25% apple cider vinegar, 25% worcestershire, and 50% water and poured in spray bottle. spray ribs every hour for 3 hours.



Played some pool time trivia to kill time



After 3 hours in the smoker.



these come in handy for all around camping they are made from silicone, easy to clean and good thermal protection



time to remove ribs (shut smoker lid while prepping for foil) and foil. I use to layers of foiled and heavily spray apple mixture inside the foil.





Place then back in the smoker



I leave them in foil for 90 minutes and I did raise the internal temperature to 235 while in the foil.



removed after 90 minutes, notice the meat is starting to shrink from the bone upper left



Lots of liquid before you foil to prevent the foil from sticking to the ribs





Time to sauce and place back in the smoker, the ribs are basically done at this point. They are breaking apart if you don't use two hands to pick up the rack. I sauced on the the table and put back into the smoker for 25 mins, just long enough for the sauce to thicken up a bit and stick to the ribs



Removed from smoker, I always test and see if the ribs tear apart by lifting one side and they did. This is a good test to make sure they are done.

My daughter is a picky eater and she enjoyed them



Moist and tender and the bones are easily removed





Allow 6 hours for cooking, can't rush the smoker.

Great looking food and campground setup. Will you come to the Fort with me and cook all week. That looks delicious, but a lot of work.

WOW, those ribs look great. My boss probably wont like the fact that I caught myself licking my computer screen. Great Job when the pickyest eater gobbles them down. Have a great vacation...
 
Had to secure my spot at the meadows pool today, waiting for the laptop to charge. I sent one of my kids down to the pool while I made breakfast. He ran down the computer playing some new game called roblox.

Would love to cook for a group. We won't be back till 2016 summer unless I can justify a fall break trip in October. :)

I have been slacking a bit on the updates, we have just fell into the groove at the fort, relaxing more than playing. I might have to complete the trip report when we get back home.

Oh my, the smoked ribs look so yummy! One of my favorite foods - must get dh busy on the Green Egg again. :)
 
Well I never did complete the live trip report, had to get back to work and deal with the "depression" of the fort trip being over
…. It took me about ten months to get over…..now I CAN GET BACK ON DIS and start planning my 2016 summer trip! AAA reservations etc and I need to get up to speed on the latest fort info. Glad to be over the depression…We can only make the trip every two years due to the drive.

Dang it, buddy, you made me look at this page and I saw those ribs again....

AAA discounts (or discounts of any kind) are gone or as rare as hen's teeth. And for the post-Fort depression, the best treatment I have found is to make another reservation as soon as I get home. Even if I have to change it, extend it, shorten it, move it, just having it out there somewhere on the horizon is a plus.

As the man who started the recent faze of "men-with-their-feet-propped-up-on-the-TE-porch" picture posted in a DIS trip report, I salute you.
