For the majority of my trip I will be with a friend and we both will have access to FP's at 60 days out from staying at a resort, but there is one day where we are going our separate ways and I will be with a different friend who lives locally and she will just be buying a 1 day ticket. Do I need to wait till 30 days out to make FP's with her or can I add her on as a guest when I make mine at 60 days? And will she need an MDE account if that's allowed, or can I just add an unspecified guest?

My personal opinion is that if she's not an immediate family member, she should have her own MDE account. If she opens her own MDE account, you can add her as a guest to yours and then use the 'Invite to Connect' feature and enter the email address she used when she created her account. This will connect your two account so you can plan for each other.

You can add people to your account and they don't need to have their own MDE accounts. I have a family member and two friends who are not that into Disney and are not tech savvy. I managed their fast passes and ADRs when we traveled to WDW together. When your friend purchase her ticket you can use the confirmation number and assign the ticket to her. You won't be able to make fast passes for the friend with the one day ticket until she purchases and you assign the ticket.
