Lines for restaurants??

Hi, heading down to universal next week. Was wondering what the wait times are like for the restaurants such as Margarittaville, Bubba Gumps, Hard Rock. We like to eat late anyway, around 8ish?

There's a podium where you can make a reservation in the morning for that night. At least that's what we did back in '07, but not sure if that is still the case.
