Lightsaber theme

Our date to try to get a reservation to build a lightsaber is coming up. Going to try to get reservation for Nov 10th, Sept 11th is my 60 day out, what time do I need to start trying to schedule our reservation, midnight, 7 am? Will need it for just 1 builder and 1 watch, do I make the reservation for 1 or 2? Do I need to know which one he wants to build at that time or can that be decided when we check in? Thanks for any information.
