Let the cooking commence!

OMG! My turkey turned out just beautiful, the best looking turkey I've ever made. I hated to cut it! But I did. I sliced every bit of meat off that baby and tossed the carcass. I used to keep the carcass for soup, but nobody in my family likes it so out it goes. Tomorrow I'll put enough turkey for one meal into a pie plate with a little pan juices, cover it with foil, and heat it up in the oven while the sweet potatoes bake. It always comes out very moist.

Thanks for the suggestions - I'll do the same thing!!
 
I am brining a turkey for the first time too. Actually it is my first time ever cooking a turkey at all. And I have my cheesecake baked.

I haven't read all the other posts but just had to say that brining a turkey is AWESOME!!!
We have done it for the last 5 years, and never had a dry bird. The first year we checked the temp three times because we couldn't believe a turkey could be that moist and be done. It also makes the meat taste so yummy! You don't even need gravy (but gravy is good stuff so I still put it on!)
My turkey is in the brining bag now.
