My parents decided they are not joining us on this trip. Which I am ok with We have several reservations for 5, and now their are 3 of us. When I look at what's available several of the restaurants have nothing available. If I call reservations will they allow me to change the reservation to 3 people from 5??

They will, IF there is availability for a party of three.

Unless it's a prepaid reservation (you paid for it when you booked it), like CRT or a dinner show, just show up without them and say you have 3 instead of 5. There will be no issue.

If it's a prepaid reservation, call and remove your parents from the reservation.
