Lent-vegetarian options at Epcot

I already have dinner at Rose and Crown and ordering the fish and chips and don't want to eat at Coral Reef, but what options are at Epcot for fish or vegetarian, or at flower and garden festival? My son isn't an adventurous eater so the easier the better.

I realized that our "eating around Epcot" day falls on a Friday in Lent so I've been researching this a bit. So far I've found cheese empanadas at La Cantina de Angel, Mac n cheese at Regal Eagle, hummus fries at Spice Road table, cheesy crab wontons at the China F&G booth...plus lots of sweet treats (and of course the fish & chips at Yorkshire county or Rose & Crown).

Sunshine Seasons is a CS in the Land pav. They have Salmon, cheese flatbread and mac& cheese on the kids menu. And Grilled Salmon and shrimp stir-fry and cheese flatbread on the adult menu.
In world showcase La Cantina de San Angel the CS in Mexico they have cheese empanadas and fish tacos.
Regal Eagle at the American pav, has a power greens salad and sides of mac&cheese and baked beans.
My family loves Teppan Edo in Japan for a sit down and they have salmon, shrimp, scallops or tofu for the main dishes as options. I think Rose and Crown is a great option for the picky eater and the fish and chips are great! There's a Cs that sells fish and chips as well.

Every TS restaurant in EP will have a fish and/or vegetarian option. I would look through the menus and see what appeals to you.

Lots of non meat options in Epcot. Check out the menus. Some food booths will have non meat options too.

Might also consider some of the pizzas (and other items) at Via Napoli.

We used to like Morocco as there were plenty of vegetarian options that were interesting.
