Lemon Pie Filling?

I found a recipe on Pinterest yesterday for lemon bars using only a cake mix, butter and lemon pie filling.

When I did my grocery shopping this morning I could not find any of the pie filling. :confused3 They had all kinds except lemon.

Is lemon a flavor that's only sold during summer?
 
I am sure other stores probably carry it, but I just make my own using the Wilton recipe :


For a change of pace, try our tangy Lemon Cake Filling. Perfect paired with our Lemon Cake, it can also be used to add a bit of pizzazz to other more subtle cake flavors.

Ingredients

3/4 cup granulated sugar
2 tablespoons cornstarch
1/8 teaspoon salt
3/4 cup cold water
2 egg yolks, slightly beaten
1 teaspoon grated lemon peel
Juice of medium lemon
1 tablespoon butter or margarine


Makes about 1 cup of filling.

Instructions:

Step 1

In a small saucepan, combine sugar, cornstarch and salt. Gradually add water and whisk until well blended. Whisk in egg yolks, lemon peel and lemon juice. Cook over medium heat, whisking constantly; until thick and bubbly. Boil one minute; remove from heat. Stir in butter. Cool to room temperature, without stirring.
 
Did you look in the jello/pudding aisle? My mom always used My T Fine lemon pie filling that came in a little box.

Isn't My T Fine a pudding? Never thought of using that. Might have to try it.

I just saw canned lemon pie filling at the store the other day. They had apple, cherry and lemon.
 
I have made that recipe and it was only ok! I was actually a little disappointed in it. I have found it in odd places like Big Lots and Dollar Tree. Kroger has pie fillings, but mine doesn't sell lemon.

My mom used to use a Jello lemon pie filling that was delicious!

Also, OP, if your store has a bakery, they may sell you lemon filling they use for pies. I've bought different fillings from our local store that way.

Our store carries it, and lemon curd, but you could also make it from scratch. Mmmmm...
