Have lurked in this thread more than a few times now. Have made the Choc chip dessert ball and thought it was time I returned the favor.
Lemon Bars
1 cup butter - softened
1 cup sugar
2 cups flour
1 1/4 cup oatmeal {not instant}
Juice of 3 lemons
zest of 2 lemons, chopped fine
zest of 1 orange, chopped fine
1 14oz can sweetened condensed milk
Preheat oven 350. Cream butter and sugar then add flour and oatmeal to make dough [it will be a little crumbly], set aside. Stir juice and zest into condensed milk. Set aside. Butter or spray a 9x13 pan. Press 2/3 of the dough into pan. Spread milk mixture evenly over top of dough. Sprinkle with remaining dough over top.
Bake 30-35 minutes
Note: DH doesn't like the oatmeal texture so I pulverize the oatmeal in a blender to a powder first. Would also help with picky kids who may not want oatmeal. Also have used some orange juice mixed with lemon juice - also good - less tart.
