Any ideas for the leftovers?
I'm getting kind of tired turkey sandwiches or turkey, stuffing, and gravy. Everything else is gone but these two things.
Im really stumped about the stuffing. I guess I could freeze it?? Make some sort of casserole with it all?
What do you all do with your leftovers?? :cat:

I made a "leftovers" casserole this year. It had turkey, stuffing, crandberry sauce and some other things in it and baked. There are man recipes online for something like this. But in the end, it all sort of tastes the same.

We seldom have stuffing left, but when we do, I cut it into portion size pieces and freeze it. Then I bake a portion in the oven to go with chicken later. I am still using up the last of the thanksgiving turkey that I froze, in soups and in a noodle casserole.

Put a thin layer of stuffing in the bottom of a 2 qt casserole dish
Then layer in peas (I usually use a bag of frozen Birdseye ones - cooked)
Mushrooms (you can use canned - 2 small cans, but I just cook one package of sliced fresh ones)
About 2 cups of chunked cooked turkey
Mix one can of cream of chicken (or mushroom) soup with 2/3rds of a soup can of milk and pour the mixture over the casserole
Top with stuffing - I usually do it about an inch thick.

Cook at 350 degrees for 30 minutes. You can also substitute whatever vegetables you like. My family likes peas, but I've also done it with leftover green beans.
