I don't buy ham too often, but my kids love it. So last time I diced up what we didn't eat and put it in the freezer measured out in about 2 cups per ziploc bag. It actually worked out great. I used it in soups, casseroles, quiche and for omelets.

I just made a great ham and potato soup yesterday in the crockpot.... with leftover Christmas ham, diced potatoes, carrots and onions, fresh chopped chives, all in water and bullion for about 6 hrs...20 min. before serving, stir in a roux of flour and butter...so delicious!
I agree, great for soup, etc.! I have a pot of Hurst's 15 bean soup on right now . DSonIL made stuffed ham for our C'mas gathering, so rather than throw the bone away, I told him I'd make bean soup. Soaked dry beans over night, while cooking added tomatoes, carrots, onions, and spice mix from pkg. After cooking several hours by this afternoon will make a delicious soup on a cold windy day...specially w/hot biscuits.
I have one for new years day, like every year, and will do the freezing thing too. I save the bone for soup and use the cut up bits over time, very yummy in a omelette for a 'breakfast for dinner' night
Other than that, you can take the leftovers, including the bone, and make either bean soup or split pea soup. Very easy.
My preference is to NOT make soup with honeybaked ham leftovers because of all the sweetness/sugar injected onto and into the ham. It kind of makes the soup sweet but it is still okay for that--just not my preference.
I always make scalloped potatoes and ham, delicious! There is always quiche, ham casserole, pasta salad and fried potatoes with ham,onions and a little bell pepper.
I cooked that dinner tonight. We have ate the devil out the ham. The kids have been eating ham slice all day. All the ask for eat today. But made them at least eat a veggie today. LOL
