Leave tomorrow! - Review ADRs, tips?

We arrive in WDW tomorrow!! So excited! Here are our ADRs/plans for the week. It's DH, me, dd (18 months), and my mother (her first visit in 30+ years). DD is a night owl - she takes a long afternoon nap usually, and is up until 10 or so. Thus the late dinner reservations. We're staying at POFQ the entire time.

Wed, Feb 11th - Hoop Dee Doo Review, 7:15 seating

Thur, Feb 12th - EMH MK in morning, hop to Epcot, dinner at Coral Reef 8:10 pm

Fri, Feb 13th - Open morning (maybe MK?), hop to Epcot, dinner at Le Cellier 8:10 pm

Sat, Feb 14th - EMH DHS morning, hop to Epcot, dinner at Akershus for Valentine's Day - 7:50 pm

Sun, Feb 15th - Open morning (maybe AK?), hop to DHS, dinner at Brown Derby w/ Fantasmic package 4:10 pm

Mon, Feb 16th - Open Day (pres day will be busy, so trying to figure out which will be quietest park) Dinner at Chef Mickey's 7:35

Tuesday, Feb 17th - AK all day - 4:15 dinner at Tusker House, maybe head to Epcot for evening EMH after.

Wed, Feb 18th - Open morning. Flight leaves MCO at 6:15 pm, so hoping to go until lunch in the parks.
