If I book an ADR for 2:50, will I be able to order off of the lunch menu, or since it will likely take a few minutes to sit down, will I be forced to order off the dinner menu?

As long as 2:50 is within the lunch hours and you check in while it's lunchtime, you'll be ordering off the lunch menu.
