I was expecting a tough week at work but if all goes well I may have an enjoyable week.

Our work week goes from Wednesday to Tuesday. Well, Matthew has a play at school today so I was going to have to leave early. We've got lots of help this week because a lot of our employees are students and they're out of school and want more hours. So I decided just to take the whole day off. I had already planned to take Saturday off - I worked Thanksgiving so I'm supposed to get Christmas Eve off and we're closed on Christmas day. Then yesterday one of my bookeepers was complaining - well, not really complaining but just talking - about having to work a regular cashier shift on Friday. I hadn't posted the schedule yet and I did some juggling, covered her shift, gave her my shift and put myself down for another day off! :cool1: The boss is fine with it as long as everything is covered. So I only work tomorrow and Sunday! The boys were really happy that I'll have Friday and Saturday off with them before Christmas!!!

I don't blame you. So now you have to take more time to bring the car in and have it fixed again :headache:

I called them yesterday and still have not heard back. But I am not pushing the issue because I don't have the time to take the darn thing back in.

I'm glad that you liked last semester so much that you're ready to go back. Have you already scheduled your classes for next semester? How many classes will you be taking??

I have 3 scheduled so far and I'm thinking about adding 1 or 2 more, but I'm not sure, I don't want to try to take on too much at once, and I need to talk to the counselor b/c there are some classes that are required for the program that I'm trying to get into, but they're not on my degree plan so I have to make sure Fin Aid will pay for them

HEY Kathy! I have a questions. I know you've made chocolate covered cookies and pretzles before, how do you make the chocolate to dip them? I want to make some to take to the family dinner for Christmas but I'm not sure what the best way to do it is

The best way I've found, and the easiest, is to buy "Almond Bark." It is like chocolate but has some kind of oils in that make it a better consistency when you melt it. It comes in vanilla (white) and chocolate (brown). You can also use the semi-sweet chips in chocolate or white chocolate.

I always melt mine on the stove-top but you can also melt it in the microwave. For the stove-top all you do is melt it at a low-to-medium temperature in a double boiler. If you don't have a double boiler then you can melt it in a saucepan directly on the stovetop but be careful because if you overheat it the consistency isn't right and it clumps.

The important thing to remember is not to overheat it! If you do and it is think or clumpy you can add just a little solid shortening and let it melt through it slowly. (Never add water if it gets thick!)
