Just came in from the garage, trying to figure out where everything will be stowed for the drive down to the Fort for Christmas. The light kit is supposed to be here friday for the cart, Ryan got the rear seat and new springs installed, I waxed and armor all'd the cart and am going to order the new batteries next week. We picked up a nice set of LED lights and garland to decorate the canopy of the cart, got my spare battery and inverter set up and we went through the storage in the trailer to figure out what we can leave at home. We are used to having the entire back of the truck to pile things since I have a cap on it most of the time, hauling the cart is going to make it tough to pack.
Next up is making up meat for the freezer, I usually cook a bunch of chicken, beef and pork and freeze it in qt storage containers to save some money on the road and at WDW.

forgot to say that I have my Musket mickey and my green DIS mickey on the windshield of the cart.....
 
Scott....I cant say Im jealous becasuse I just returned from the fort...but I CAN say from the bottom of my heart that I wish we could have been there at the same time. I hope you have a great trip with a ton of wonderful memories....Next time we plan a trip, it will be at a time when you're going as well.

Dont go gettin all crazy Rog, I am much more entertaining online than I am in person. :cool2:

I think the planning and prep part is all some of the fun! I can't wait until next weekend when DH moves the camper around to the front so I can begin packing and organizing.:cool1:

For your meats - do you just cook the meat to have available to add to different dishes - or are you preparing an entire meal? Give me ideas, please!:thumbsup2

Typically I will just make the meat lightly seasoned and then use it as the foundation for the meal. I make roast beef and put part of it in a clear gravy and some shredded for sandwiches, burrito's etc. Chicken is usually shredded and I also bag some grilled breasts for sandwiches and salads. I also make some ground beef up as loose meat for whatever strikes me and then some as sloppy joes. We have a little larger freezer in this trailer so I have the room for quite a bit if I pack strartegically.
