We have two strollers, one is a Mia modal atmosferra (large and sturdy and can face in or outward), the other is a kolcraft contours lite umbrella stroller.

Mia moda Pros: Much more storage. Reclines flat. Very large shade. Very sturdy, could support hanging bags etc
Cons: More expensive in case of loss or theft. Hard to collapse for plane travel/room storage (very bulky). Heavier (traveling w disney buses so a lot of collapsing and stowing)

Contour Pros: Easy to fold and lightweight. Has decent storage. Small and compact. Cheap to replace if lost or stolen
Cons: Does not recline flat for naps. Not as sturdy for hanging items. Reduced amount of storage from large stroller.

How safe are strollers at disney from theft?

We have a Bob for daily use. Bought a MacLaren for travel for three main reasons:

1. The thought of the bob walking made me cringe - and yes theft does happen.

2. The bob is a pain in the behind to fold and unfold if it's just me and the tiny person, whereas I can easily do the MacLaren one handed, which makes the busses a lot easier. And it's much smaller and lighter when folded.

3. MacLaren is still super sturdy, reclines enough for naps and has shade and storage.

Definitely a "deluxe" umbrella stroller. One with a nice sunshade ( or you can buy one to attach) and that reclines.

Why? Transport. Much easier to fold up and carry into buses and monorail.

Also easier (lighter) to push around all day. And then the thought of theft, although we were fine.

I would absolutely bring your good stroller. My boys really need the full recline and the big sunshade while at wdw. They always nap in their stroller and the sun is so bright that I like having them covered with the big shade. we are frequent wdw travelers so I bought a Maclaren thinking it would work for us. Hated it and I mean hate. Poor sunshade and partial recline just didn't work for our needs. If you are worried about theft (we have brought our pricey bob duallie so I understand) buy a bicycle lock and run it through the back tires. That way the CM's can still move the stroller but it will make theft unlikely.

I've heard of people making a laminated sign to zip tie to their handlebars and using a bike lock through the back wheels to prevent theft. I know the ease of moving, stowing, flying, and storage in the room would be way easier with the deluxe umbrella stroller. We've never done DW with children before so I'm not sure how we will do naps yet. I was planning on going back to the room but we may try to do some stroller naps too. Please keep the advice coming. Anything helps.

We have brought our uppa baby vista and city elite double with no issues. We take the buses and yes for 20 minutes a day it's inconvenient to have the larger stroller but the other 8+ hours more than makes up for it with the ease of pushing, the comfort for our kids (and their naps). As for theft, it is much more likely that things get stolen out of a stroller than a stroller get stolen. There are tens of thousands of strollers at Disney on any given day the chance of your being stolen is slim. We did put our name on our stroller (had stickers made up) in obvious and some not so obvious places.
