Labor Day 2015

We are currently booked for Sept 4-10 (arriving the Friday before Labor Day). I need help planning which parks to visit on what days, crowd wise. I will not have park hopper passes so I need to keep ADR in mind when planning my park days. Should I save MK for the last 2-3 days of the visit...thinking it won't be as crowded after Labor Day, as it may be the weekend prior and Labor day itself??? I was thinking doing HS on Saturday, Epcot Sunday, and possibly spending 3 days at MK Labor day, and then the 2 days after. I'll be traveling with a 4 and 7 year old. Any help in planning my trip is greatly appreciated!

Historically Labor Day weekend does not see huge crowds, so I would not overthink this.
