Knotts / Universal / Med Times / Pirate Dinners?

I will be going on a trip with my son next Jan for a week.

We will be doing Disney for at least 3 days but I want to do something else we haven't done before.

After reading comments about Knotts and such I am not sure it would be worth it.... Money is no big option as I planning on money for that day anyway.

Suggestions?

He'll be 4.5 on the trip...

Right now he is 41", so I hope he would be 42" by then but I don't want to count on it and everyone measures slightly differently.
