I have never used a electric sharpener a day in my life....I always use one of those "pole" sharpener. Works great, cheap, and knives are as sharp as the day I bought them...I even just sharpened knives that I was going to throw away cause they were so old and dull. Now they are as sharp as the new set I have.
Here is a website just to show a picture of them...i have never used this website and i think those prices are a bit high....You can get them anywhere target, kohls, williams and sonoma (would be expensive there), etc
Back in college I worked in a gourmet kitchen store, and we sold Wustoff ceramic disk sharpeners. I purchased one over ten years ago, and my knifes are great! The other type, with the long rod, I found very difficult to use. Great knives are undervalued in many kitchens, and they need good care.
There is a big difference between honing and sharpening your knives. Good knives (some of my favorites are Wusthof and Henckels) only need to be sharpened once or twice a year. But honing is an entirely different thing! You should hone your knife on a honing steel every single time you use your knife. (On large chopping or slicing jobs, you might even want to hone once in between all the knife work!)
If the OP has really dull knives she should bring them to a professional (assuming they are good knives) to have them sharpened, then keep them in ship shape using a honing steel. What you have described is a honing steel not a knife sharpner.
