When we bought our house, it came with an old JennAir stove that has a griddle set-up on the left (which I never used) and 2 burners on the right. I used it this way for years, juggling pots and pans around. We finally bought the 2-burner insert to replace the griddle, and guess what? I hardly EVER use them! Nice to have them, but rarely used. I guess you grow accustomed to using whatever you have.
We had exactly the same thing when we bought our house. But I used that grill a lot, really missed it when we had to replace it. We bought a Kenmore gas stove which I hated and now have a Viking gas cooktop with four burners and a separate oven beneath it. I use one burner the majority of the time, the smallest one. Sometimes two, but not much in the oven since we got an Instant Pot. DH is frustrated that I don't use more/bigger burners, but hey, I'm cooking! The ones in front are the smallest and biggest and the biggest is just too much. Something to consider when choosing a cooktop.
Moving in a year and have bought a Wolf induction top for our "new" kitchen, 30" 4 burners. The single oven will be in a different location, in the wall with a microwave. Can't wait to try induction out. Should be much cooler cooking in the summer!
I will admit there's a difference between cooking on the "lower budget" appliances like the Kenmore, and the Viking etc. DH decided we need a Bosch dishwasher too (so very quiet). They are pricey and I was reluctant, but for something you use every day, worth it. And the number of burners really depends on your family size and how many dishes you usually cook at the same time.
