Kid must-Do's that don't involve 4 major theme parks or eating?

Another idea is Disney's Fantasia Gardens miniature golf course. It's a really cool theme based on the classic Disney movie Fantasia.
Just make sure you play the Fantasia Gardens course, which is traditional mini golf. We accidentally played the Fantasia Fairways, which more like a real golf course and requires much more skill!
 
Explore resorts on the skyliner, lots of great things to see and do, including statues and games room at AoA. you can walk to Mini golf from Epcot end.
 

We love the water parks, also love doing the full skyliner tour. We also love the boats that go from Disney Springs to various resorts, we'll often do a round trip on those. I know you said "not food" but we get on the boat at DS, ride to PQFQ, eat beignets, walk around, then ride back and have a great time.
 
Our favorite is scavenger hunts. Wellness Scavenger Hunts which covers all 3 All Stars Resorts is an epic day. Remember those resort mugs so you can get free refills (while the kids are endless bundles of energy you may need that break between each resort). Many of the resorts have a Scavenger Hunt. Best of all they are free!
 
As crazy as it sounds ours always enjoyed the movies at night by the pool, never understood why... They also love when we rent boats so we try to do it a couple times each trip.

Disney Transportation is so fun. I'm pretty sure my niece's favorite ever Disney day (4 years at the time) was when her grandparents took her on a transportation day. We were staying at Dolphin, so they took a boat to Hollywood Studios, Skyliner to CB and played on the playground, Skyliner to EPCOT, and boat back to Dolphin with a few pit stops for treats along the way.
 
We enjoyed Foot Golf.

My family really does love swimming at our resort.

They aren't too keen on touring other resorts.
 
The chip and Dale sing along at Ft Wilderness followed by a movie. There are food trucks and s’mores!! Sometimes we walk down to the beach for fireworks and the electrical water pageant!!!!
 
how young are the kids? Last trip we told the littles we'd find a different playground daily,followed by a treat of some sort (like ice cream) they loved it- there are playgrounds at all resorts

Oh my, is the Electric Water Pageant still a thing?! Can you see it from the T & T docks or the Poly beach?

We're at Shades of Green and have one Saturday when many in our party will be leaving, and we're not using park tickets that day. I would love to see this again!

Yes, it is! You can see it from Poly beach, GF boat dock, MK entrance plaza, CR marina, WL beach or FW beach. If you use the Search function in the MDE app, it will tell you what time it will be at each location that night.

One of my most special WDW memories was years ago, taking the boats from the Magic Kingdom to the T & T, and all of a sudden alongside came the Electrical Water Pageant! I didn't even know it was a thing! It made such a magical end to our night.
