You can watch it from Fantasyland on a bench. Try by Winnie the Pooh or Ariel's grotto, you can pull up a chair, pull up two and put your feet up!

You can also sit on a bench in toontown.

When I used to work in TT while I was on my college program, it always sounded like the fireworks were being set off right next to the building! At the time, I don't know if they do this anymore or not, the busses that shuttled the CM's from the park to the parking lot were stopped during the fireworks. It was always funny to watch the mad dash to the busses when they were over! LOL!
