and have lots of questions that I'm hoping you can answer.

1. Is the express ride passes that the package comes with include express passing rides at SeaWorld & Aquatica -- or is it just for Universal & Island of Adventure??

2. Are there refillable mug stations at the hotels (we're staying at the Royal Pacific)?

3. Royal Pacific said they offer a shuttle bus to Sea World, but is there a separate shuttle bus for Aquatica?

4. Where is Wet "n Wild and how do we get there from hotel??

5. We're doing the Universal Dining Plan -- do the allotted meals have to be used that day, or can they be banked? (Similar to Disney's dining plans?)

no.
the express pass is only for the universal orlando parks, IOA and the Studios.

no

no, usually same shuttle for both.

the hotel offers a free shuttle.

the dining plan is valid anytime during your stay.
you pick the dates.

you sign up for the free shuttle at the hotel lobby concierge the night prior.
if you decide the morning of you want to do Aquatica, SeaWorld, Wet & Wild, you can only get on the shuttle list if space is available.
