Remy was still making the rounds at Les Chefs in December, so hopefully he'll be there when you go.
He starts his rounds at 12:30, 1:40, 2:50, and 5:20 pm Monday through Saturday (he gets Sunday off).
As long as you're seated on time, you should see him during in 1:40 pm rounds - each of the rounds takes about 40 minutes. Note that he goes from table to table and does not return if you are not there or if you are in the process of being seated. So make sure you're ready when he comes.
