Just booked anniversary trip for apr 27- may 4!!!

I am so excited to have booked our trip to celebrate our 5 ur anniversary!!! Now to get the days/ meals planned. Any pointers? How much time should I plan for each park? Does sit down dining mean u don't have enough time for the parks?
