Would you do 7:00 or 8:35 if you want to see fireworks at 8:00??? How do I make this work? I don’t need a primo spot would just like to see something!
 
I would do 8:35 pm and grab a fireworks viewing spot in the hub to the left of the castle so you can get to Skipper after the fireworks - the show is about 20 minutes, so that will give you time to get to the restaurant. There is no guarantee you will even be out of Skipper's if you go at 7 pm.
 
You're not likely to make the fireworks viewing with a 7pm dining reservation at JSC.

The 8:35 should be possible, assuming you're on that side of the square when the fireworks end. Be prepared to fight the crowds to get to JSC.
 
I've been seated upon arrival at Skipper Canteen and have waiting 45+ minutes for my reservation. I'd go after.
 

8:35. I don't want to feel like I have to rush through a meal to get to something.
Also, we have had times where we have needed to wait to be seated there. So 7 might be seated at 7:15 or later.
