Hi there Tequilamamacita! Welcome! And the more accents the better! I happen to have a slight Hungarian accent when I am excited or yelling at my children, but otherwise boring Midwestern accent here! Hey, I just posted with all exclamation points! Why not?! This is the thread where we get excited about our cruise! Exclamation points work well! 
I will try to answer some of your questions, but I am not expert so things may have changed since we last cruised, so please forgive me if I am wrong (and hopefully someone will correct me if so!).
Remy and Palo are adults only, 18 and over I believe.
You can either have the kids eat in the kids clubs if they enjoy their times there, or you can order room service or take them up to the buffet (forget the name of it on the Dream, but at least on the Magic and Wonder there was always open casual seating at Topsiders, etc.). Or just go up by the pool and get them some chicken strips and fries, whatever they like up there. My children always liked room service, because they felt so grown up choosing their food and then having it delivered just for them.
Since you are in concierge, I believe you can also order off the menus for that day and have those delivered from room service, too. I have never stayed in concierge, so I don't know about this firsthand, but it is what I have heard.
And congrats on the concierge and your parents anniversary! Have you let Disney know about this? When we when with my parents 4 years ago on their anniversary, our servers presented them with a pin that said "Happy Anniversary" and a special cake. It was a great surprise, but that was on the Wonder, and it was 4 years ago, so I am not sure if they do this on the Dream, but hey doesn't hurt to mention it!
