So we've flipped from possible DL trip to back to FL! But no WDW this time. Thinking 2 days at US/IOA. How insane is this week typically?

I've never been at that time but, you are right in the middle of a peak time. Are you staying on site at a deluxe? How many people and ages? I haven't purchased tickets in a long time as my family all have APs but I believe one of the current promotions is buy to 2 days get the 3rd day free. Something to consider.
 

We will be there and I'm nervous about the crowds!! We're staying at RPR and I'm hoping the lines aren't terrible
 
Unfortunately that's the only time we have available with my husbands work schedule and the kids' school stuff. I guess we will make the best of it, nothing else we can do now.

If you are staying onsite and have the unlimited express pass (except Cabana Bay) it won't be that bad. The passes do help and that time of year is actually almost a must.
 
We are going 11-14. Cabana Bay...so no express passes.
Our plan is EE each day, staying in the park until lunch, pool time in the afternoon, going back for dinner and the evening. We'll miss the heat of the day and hopefully the largest amount of crowds.
We were at US/IOA in Dec and Mar, so don't need to do everything. In fact we plan on missing the rollercoasters completely and concentrating on HP and shows more.

Then other than it being busy as you walk (and the Potter rides) I think you should be fine. Potter rides have single rider lines (I know Forbidden Journey does and Gringotts might) so that should cut down the lines if riding together isn't a must (FJ once you sit you won't be aware of anyone on either side of you).
