Journal templates for US/IOA?

Hi! I'm a total newbie and leaving on monday for a trip to US and WDW. I'm going with my four kids and would like to tell them of the trip by leaving them a 'journal' at the breakfast table before we leave It's a surprise

I saw on the mousesavers (I think?) that someone had free downloadable templates for WDW, but I can't find anything for US. My kids are more excited for US so I was hoping to make a combo.

Any ideas on what to do? Tutorials for how to create? Where to purchase? I'm happy to pay someone to do up a few general pages of fill in the blanks

if it helps, my kids are 10, 7, 3 and a baby.
