Natalie (Donatalie) has lots of great pages if ink is no object. You can find a link to her shared things in the "meet the DISigners" thread.

I have one set up in Word that uses less ink but still has characters and fun images...the backgrounds are just white. You can find it in my 4shared file in the link in my signature. Then look in the "WDW Kids Journal" file.
