We will be in WDW in less than 2 weeks and my DS really wants to do Jedi Training. Here's the thing, we are not early morning group on vacation. If we are not there at rope drop, maybe 2 hrs after the park opens, what are the chances we will be able to still sign up? It is projected to be lower crowds. Any thoughts? Thanks.

Pretty low. Crowd levels don't have a ton to do with availability for Jedi Training. There are a set number of spots in each training, and while there might still be a spot in a late session, your "low crowd" day may be the day that a horde of homeschoolers descend on rope drop.

That message applies to just about anything that's important for a guest to experience at WDW.

It's better to arrive far too early, than to arrive one minute too late.
 
Do the kids have to be there to sign up? We aren't early morning people either. However, we are staying at BWV. Could I go sign up at rope drop and let my kids sleep in with my husband?
 

The kids have to be there. They will ask them questions while they are signing up and explain to them that they have to follow the rules
