January holiday

I'm going in January and have been told that the parks are very quiet at this time of year. I will be there 17th-31st.
Planning on the 5 day hopper, Seaworld and Universal and Boggy Creek air boats.
I have been 3 times before and would like to take things a little more leisurely this time.
With the parks supposedly quieter, does anyone have any suggestions on how long it could possibly take to do each park properly.
I'm hoping that I will be able to leave the parks at lunchtime for a good break, maybe back at the villa which is at Emerald Island Resort, and go back to another park later in the afternoon.
I realise that the park times will be shorter, but thought this would be a good idea for something like Fantasmic or Epcot fireworks.
I really need to do some planning and have realised just how much we miss out on by reading other peoples experiences.
You just don't appreciate how much fun stuff there is to do there.
Also, when we went last September, we didn't need to book for any meals ( character etc ). Do you think we could get away with not phoning this time?
