Recipe for Baked Potato Soup

WARNING THIS IS NOT HEALTHY ONE BIT

I use about 4-5 Baked potatoes (I just microwave potatoes for about 18-20 minutes) I do these early enough so that they have time to cool before I use them.

Recipe for Soup

2/3 cup butter
2/3 cup flour
6 cups milk (I use 2%)
salt and pepper for taste
4-5 green onions chopped
potatoes peeled and cubed
1- 8oz container of sour cream
1-2 bags of bacon bits ( I use 2 because my NDH loves BACON)
1/2 bag of cheddar cheese

Melt butter completely on med. high then add flour slowly to create a roux.
Add milk 1 cup at a time whisking completely.
Continue to whisk until mixture is thick and creamy. Once thick turn the heat down to low (you don't want to burn it)
Add salt and pepper for taste.
Add the green onions, potatoes, and bacon bits.
Stir in the entire container of sour cream and keep stirring while it melts.
Once melted add the 1/2 bag of cheddar cheese a handful at a time. Stir while cheese melts, this will give the soup an orange tint to it.
Let the soup sit on low for about 15-20 minutes to allow the flavors to simmer in the soup. You can also put into a crock pot and allow it to sit on warm for awhile. Check on it and stir the soup every once awhile.

Serve in a bowl and top it off with a little bit of cheese as a garnish.
At our house we cut up some pieces of bread for dipping.

Wow! Jen that soup sounds absolutely sinful! I must make it! Unfortunately my llittle DD5 has an intolerance to milk and would not be able to eat it! Oh well, more for me!

No this is not new information! Shelly usually posts the refurbs at the beginning of every thread! The newest closure however is Ellen's Energy Adventure in the Universe of Enegy! That will be closed from Jan 5 through to MArch!

HEY Birdies! We have had a crazy busy day today! Saturdays we try to get as much of the house clean as possible! Plus laundry (I do all the bed sheets and towels on Saturdays) plus cleaning the kids rooms PLUS grocery shopping and PLUS my dad was here today putting up drywall in our basement! So I am totally zonked now and headed for bed! DH and I just watched a couple episodes of FRIENDS. Nighty Night!

Yes not far from you at all, and I see you do the dreaded drive to WDW too!.... Actually I don't think the drive is to bad. My wife and I make it in about 16 hours usually, as long as there are no problems on I95.

And let me say, ya'll are making me hungry with all this potatoe soup talk, I may have to get out the big pot and try making some!
 
We are in S/E Pa about 20 miles west of Phila. I saw from reading the post that there were a lot from Pa. We meet a lot of people from Pa. in WDW when we are down there. I even ran into someone from down the street once. Didn't even know they were going down.

I read somewhere that PA sends more visitors to WDW than any other state. :goodvibes I believe that one!! Last year I saw another girl from PTO at Cape May, it was really neat to see someone from your own town!
 

We had to take out little Tinkerbelle to the ER last night. She was running such a high fever that she started babbling and acting very strange. It turned out she had a reaction to her cold medicine. We got home at 5 am and slept until noon. Belle is still asleep. Poor little girl!:sad2:

I'm glad it was nothing too serious. :hug: Get lots of rest today. I hope she's doing better.

Hope everyone is having a good weekend. We went shopping and out to dinner last night. We went to O'Charley's. That was the first time we had been there. Does anyone else have one? We thought it was just okay. I wish we would have stuck to our favorite - Max & Erma's. Do you guys have those near you? Love their food!

Just checkin' in with my Snowbird peeps! Hope you all are doing well! We are fine and going to make that final payment today!

Today we spent the afternoon making Shrinky Dinks! We did some earrings for me and some ornament gifts for the grandparents and a Christmas tree necklace for each of the kids. It was FUN! And I've got some funky, fun, and mildly obnoxious holiday earrings!:rotfl:

I think I'm still in shock that it's just 46 days until Disney! And just 22 days until we get to the USA! WOW!

So, trying to skim and keep up with you all! :goodvibes
 
Morning everyone! I have been reading, but can't keep up with all the posts :lmao:

I have been busy studying only another week and half and then I can rejoin the land of the living and not spend all my time studying!!

My breaks consist of dising and planning our trip.

I think we have the "current" park hours all listed for the days we are there, now let's hope they don;t change or we gotta switch everything around again.

I couldn't sleep last night so I got up and read my UG. I think this trip is going to be MORE crazy because I know more!!! :surfweb: too much dising!!!:laughing:

Anyhow back to the books and I will check in later!

Morning everyone!!

Just checking in between cleaning. Didn't get much done yesterday so I get to do it today. Hubby and Drew (the 6 yr old) are still lounging in bed and it's 11am!! We got another 6yr old bday party (had one yesterday too) in a few hours, so I'm trying to get motivated to shower! Maybe I'll do the floors first (I HATE doing floors, but Keaton spilled my soda and I didn't have time to properly clean it yesterday so the kitchen is a bit sticky)! I'll check in later this evening! Hope you all have a wonderful Sunday. It's supposed to be in the 50's here so I can't wait!

PS Shelly, we too have OCharley's and we think its just OK, too! Have only went when someone's given us giftcards! Never heard of Max and Erma's.
 
I know this info is on other boards, but you all are so much nicer and knowledgable. I'm looking for shoes other than my tennis shoes to tour in. I like my Nike Celso flip flops, and I've heard others rave about Crocs Athens and Teva Mush. Have you guys had any experience with these? Last year my Adidas that were VERY broken in gave me blisters so I was walking thru Epcot in my socks!

Carrie- you must be getting so excited to get back to the U.S. Where will you be going other than WDW?

I have yet more cleaning to do today too - I could do some everyday it seems! I did haul out some of the boxes of Christmas decorations yesterday, I figure once I clean I can start decorating!!

I bought a pair of UGG knockoffs from Target yesterday. Only $24.99!! I'm not too sure on the size, might go back and try on more, just because when I cut the tags off and walked around, they felt snug in the toe. I heard they run big, so you should buy a smaller size than usual. If only they came in 1/2 sizes I'd be good. Oh well, they seem comfy and warm otherwise. Not sure if they're going to make the trip with me or not. I'm hoping it will be too warm!!
I've always worn sneakers (running shoes) at WDW. I've never been a flip flop girl - can't stand anything between my toes. But I might try crocs this year depending on the weather. I wear running shoes rather than walking because they're lighter especially when you wear them all day - you want lightweight shoes!! (I got that tip when I did an MS walk years ago!) Plus they have good arch support. I'm a comfort over style kind of girl! (that's the Minnesotan in me!)

That potato soup recipe was killing me last night! I must make that soon!! I have a similar recipe but you use cubed frozen hash brown potatoes. It too is YUMMY!!

Hi everyone!! I'm almost glad to see it's been a quiet weekend. My friend arrived on Friday evening and just left, so I haven't even checked in to the dis boards (aka time eater) until now!!

On Friday, I made our final payment!!!! I'm so excited!!!! DH's marathon is in 7 weeks - wow!

Friday night, I also saw Twilight. I cannot decide what I think. I mean, it was a pretty horrible movie, but I think I may have enjoyed it anyway? Does that even make sense? I mean, parts of the movie made the audience laugh and it wasn't supposed to be funny. But I think I enjoyed it anyway. Some of th CGI effects were awful and Stephenie Meyer's cameo was so weird (the whole movie, the only people who had names were people who interacted directly with Bella... and all of a sudden, someone says "here's your food, Stephenie," and then it switches back to Bella. Weird.)

Saturday, my friend and I went shopping but not to buy. Wow, still recovering from surgery and walking around a mall was HARD work!! That's so weird to say! ;)

We don't have an O'Charley's nearby (apparently there's one 20 miles away or so). We have Max & Erma's and I usually have terrible luck there.

Oh, speaking of... the friend who visited is the one I went to Disney with in 2007 where we had the really terrible horrible no good very bad service the WHOLE trip. Whenever we go ANYWHERE, we have terrible horrible no good very bad service. Friday night, our waiter was a little slow, didn't do refills, etc, but wasn't appallingly bad... just not good. Saturday night (last night): I think we just had the make-up even for all our bad services. Waiter was on the ball, made sure things were perfect, offered recommendations, and brought us a random free dessert (it was a homemade donut, topped with vanilla gelato, whipped cream - the homemade kind, and Jack Daniels sauce) because "it was there and no one else wanted it"!

First time we'd ever been there, too! Guess we'll have to go back!

Hello everyone. Hope the weekend has been good and productive.

We have O'Charley's here in WI, and agree that it's ok. Nothing really jumps out at me. I never "crave" food from there, but when I do eat there, it's good food. (does that make any sense?)

Sarah- The way you feel about Twilight is the way I felt about the Harry Potter movies when I first saw them. After reading the books, I just expected a lot more from the movies. I like the movies now, so maybe it will just take a little time.

Anywho, lots of laundry to get to today along with my scrap booking. I also have to clean the house before my mother gets home around 5. I need to find out when my uncle's dog is leaving though, because I don't want to vacuum before the dog leaves.

Oh I want Magical Disney mail!! It should be coming soon. We will also be ordering our park tickets this week! And on Friday my parents gave me a $100 gift card for Disney (it's through the Scrip program at our church) and the card is so cute!
