I know my vacation in 2 months away but I'd like to start planning mainly so I know what tickets to buy in advance.

May 16-22 (Monday to Sunday) and we plan to do a couple days at Universal. We are two 20-something year old adults.

Monday
arrive in morning
Epcot

Tuesday
Islands of Adventure

Wednesday
Animal Kingdom
Pleasure Island

Thursday
Typhoon Lagoon or Blizzard Beach


Friday
Universal Studios
CityWalk

Saturday
MGM

Sunday
departure
Walk around Downtown Disney, Boardwalk

We aren't really into Magic Kingdom much... but it would be nice to go there I guess. If we did we'd probably do it in the same day as another attraction - perhaps the water park and MK in the same day?

I checked the extra magic hours, but I'm not sure if that's really necessary. The extra magic hours for when we are there are:
MGM early hour on 17th, Epcot evening hours on 19th, AK extra morning hour on 21st (Saturday), AK extra evening hours on 17th, MK early hour on 20th, MK evening hours on 18th.
So I'm not sure if I should change things around to go to AK on Saturday, when on a Tuesday it is probably less crowded. Or change things to ge to MGM early or stay at Epcot late.

Maybe I should get the park hopper tickets so we can be more flexible?
 
If MK isn't a big thing for your family, you should consider doing the EMH evening there. It will be less crowded than during the day, so you'll probably get onto more rides and such and make better use of your time. If you go into the MK a few hours prior to EMH, you can see shows and perhaps the parade, and then stay late. MK is more magical at night, IMO, and you may get a whole different look at this particular park.

How many hours are usually spent at a water park? If we go around 10 I would think we could be done by 4 PM and go to Epcot? Is that too much for one day?

I am the queen of itineraries! The boyfriend and I made our itinerary two months ago, and now it's down to 2 weeks away, and we only revised once! It sounds like you'd rather be laid back, but I feel when you go to Disney, it's such a waste to not see everything you possibly can. Still, if you don't want to cram in everything, atleast squeeze in Magic Kingdom. It really is magical, especially in the evening with the fireworks and everything. My suggestion to you is go to MK on the 18th, since they have the extra magic hours (assuming you are staying at a WDW resort and you have park hoppers which enable you to go from park to park.) Switch Pleasure Island to the following day. AK usually closes early, around 8, so you can have a good five or six hours at MK, see fireworks, and get on some rides while it's not too busy.
 

I changed some stuff around but now are not sure what to do the first Monday. Since that is when we arrive I'd rather do a small park or activity, maybe Epcot or MGM for a little while? I could move MGM to Monday, and just do one of the Universal Parks on Saturday instead of trying to cram them into one day.. Also, if I got the 4-park ticket with magic plus, I'll have 3 visits - I have one water park, pleasure island..what to do with the 3rd visit? Another water park or pleasure island?

You are right - we like to relax but still have time to do everything. I also don't know if we'll do any park - hopping.
